Yes. In the field mapping dropdown, choose "Today's date (Gregorian)" or "Today's date (Hijri)" instead of a spreadsheet column. You can also type the tokens {{today}} or {{today_hijri}} anywhere inside a spreadsheet cell (e.g. "Signed on {{today_hijri}}") and they are replaced with the date, in the Umm al-Qura Hijri calendar for the Hijri token, when the PDFs are generated.
